Tonight's dinner...
Ingredients:
2 lbs boneless skinless chicken thighs cut into 2 inch chunks
2 cloves garlic, minced
1/2 tsp ground cumin
1/2 tsp ground coriander
1/4 tsp black pepper
1/4 tsp cinnamon
1 1/4 cup dry lentils, rinsed and drained
1 medium onion, thinly sliced
2 cans chicken broth
1 cup water
1 large yellow squash, quartered lengthwise and cut into 1 inch pieces
1/2 cup raisins
How To Prepare:
1. Combine chicken, garlis, cumin, coriander, pepper and cinnamon in crockpot
2. Add lentils then pour chicken broth and water over the mixture
3. Cook on low 8 hours
4. After 8 hours, turn to high and add squash and raisins and cook for another 15 minutes
Makes 8 (1 1/3 cup) servings

BBQ Pork Sandwiches
This is what's for dinner tonight!
Ingredients:
1 medium onion, cut into thin wedges
1 (2lb) boneless lean pork roast
1/2 tsp chili powder
1/2 tsp ground cumin
1/2 tsp black pepper
1/4 tsp garlic powder
1 cup BBQ sauce
1/4 cup cider vinegar
1 tbsp honey
1/4 tsp ground ginger
6 whole wheat hamburger buns
How To Prepare:
1. Combine onions and water in bottom of crockpot
2. trim any excess fat off roast and place in crockpot
3. mix chili powder, 1/4 tsp cumin, pepper and garlic
4. rub all over the pork roast
5. cook on low 8 hours
6. shred pork roast with forks
7. in a large bowl mix bbq sauce, honey, vinegar, ginger and remaining cumin
8. add shredded pork and onions to bowl and combine
9. serve about 1/3 of a cup of meat mixture per person
I am serving it with sweet potato tater tots!
You will have to figure out the WW points on your own based on the type of pork, bbq sauce and buns you use!!!

Lasagna Soup
Trying this for dinner tonight!!
Ingredients:
2 teaspoons olive oil
1 pound Italian sausage, casings removed
1 onion, chopped
1 green bell pepper, chopped
3 cloves garlic, minced
1 (32-ounce) container chicken broth
1 (15-ounce) can tomato sauce
1 (14 1/2-ounce) can petite diced tomatoes
1/2 teaspoon salt
1/4 teaspoon crushed red pepper
4 ounces broken whole-wheat lasagna noodles (about 4 noodles)
1/2 cup chopped fresh basil
3 tablespoons grated parmesan cheese
1/2 cup reduced-fat shredded mozzarella cheese
How To Prepare:
Heat the oil over medium-high heat in a large nonstick saucepot or Dutch oven. Add the sausage, onion, bell pepper, and garlic. Cook over medium-high heat, stirring occasionally, until the sausage is crumbled and browned, 8 – 10 minutes.
Add the broth, tomato sauce, diced tomatoes, salt, and crushed red pepper. Bring to a boil. Reduce the heat and simmer, stirring occasionally, until the flavors are blended, about 20 minutes. Add the noodles; bring to a boil. Reduce the heat and simmer, uncovered, stirring occasionally, until the soup thickens slightly and the noodles are tender, 10 – 12 minutes. Remove from the heat; stir in mozzarella, basil, and the Parmesan.
Makes 8 (1 cup) servings

3 Bean & Turkey Chili
This is in the crockpot right now!
Ingredients:
3 cans of beans (3 different kinds, choose from white, kidney, black, chili, etc...)
1 large can tomato sauce
2 cans diced tomatoes with chilis
1 pound ground turkey
1 packet of chili seasoning (or do your own with chili powder and cumin)
How To Prepare:
cook up the turkey, but not all the way, only until you see a little pink still, it will finish cooking in the crockpot.
put everything in the crockpot and stir (make sure you drain the beans, although if I use chili beans I add the juice of those).
Cook on low all day long
makes 12 (1 cup) servings

Italian Chicken
This is in the crockpot right now. Simple and sounds delish!
Ingriedients:

6 medium size red potatoes, quartered
3/4 cups light italian dressing
3/4 cups light parmaesan cheese
2 tsp oregeno
How To Prepare:
Put chicken on the bottom of the crockpot
Cover with 1/2 of the cheese, dressing and oregano
Put potatoes on top of the chicken
Add the rest of the cheese, dressing and oregano
Cook on low for 8 hours
Makes 6 servings

FIESTA CHICKEN
This is what's for dinner tonight! Super easy and I think it's going to be tasty!
Ingredients:
6 small boneless skinless chicken breasts (I used 3 large ones)
1 (15oz) can black beans, drained
1 can corn, drained
1 (15oz) jar of any type of salsa you like
1 (8oz) brick 1/3 less fat cream cheese
How To Prepare:
Put the chicken in the crockpot and pour beans, corn and salsa over it. Cook on low about 8 hours.
1/2 hour before you are ready to eat, add the brick of cream cheese to the crockpot.
After 30 minutes, shred the chicken breasts and stir everything together.
Serve over rice.
Makes 6 servings

1 (10.75oz) can condensed French Onion soup
1/2 cup apple juice
3 large Granny Smith apples sliced thick (about 3 cups)
3 cups butternut squash, peeled, seeded and cut into 2 inch pieces
2 medium size parsnips, peeled and cut into 1 inch pieces
1/2 tsp thyme
How To Prepare:
1. Stir everything together in the crockpot and cook on low for 7 to 8 hours
Makes 8 (one cup) servings
