I made this yesterday for dinner and it was delicious!
Ingredients:
1 1/2 pounds frozen boneless chicken breasts
1 can black beans (partially drained)
1 can kidney beans (partially drained)
1 can corn (drained)
1 can tomato sauce
1 large (28 oz) can diced tomatoes
1 packet taco seasoning
How To Prepare:
Put frozen chicken on the bottom of the crockpot and dump everything else on top! Cook on low for about 8 hours, break chicken up with forks before serving!
Makes 5 servings

16 Bean Soup
Trying this one tonight!
Ingredients:
1 package 16 bean soup, soaked overnight and drained
1 pound Turkey Italian Sausage, sliced
1 onion, diced
2 cloves minced garlic
3 stalks celery, chopped
3 carrots, diced
4 cups chicken stock
1 28-ounce can diced tomatoes
1 tbsp crushed oregano
How To Prepare:
Combine all ingredients in crockpot and cook on low 8 hours.
Makes 6 large servings at 9 WW Plus Points value per serving or 12 small servings at 5 WW plus points value

Taco Soup
Thanks Auntie Betty for the recipe! I adjusted it just a tad, but it was super delicious!!!
Ingredients:
1 1/2 pounds chicken breast tenders
1 packet taco seasoning
1 packet Hidden Valley Ranch dressing mix
1 jar green salsa
1 can corn
5 cans of beans (pinto, black, kidney, white, and vegetarian baked)
How To Prepare:
Put chicken on the bottom of the crockpot then add the packets of seasoning. Dump each can/jar into the crockpot (do not drain anything, use all the juices).
Cook on low for 8 hours.
Makes 8 (1 1/2 cup) servings
8 ww points plus values per serving

Sausage, Kale and Rigatoni
This was a huge hit tonight for dinner AND so easy to make...
Ingredients:
1 1/4 lb turkey italian sausage
1 large bunch of kale
1 box rigatoni
2 cups chicken stock (i used fat free)
3/4 cup parm cheese
1 tsp olive oil
salt & pepper to taste
How To Prepare:
boil water and cook noodles
take sausage out of casing and cook in olive oil, crumbling
add chopped kale to sausage and cook for about 5 minutes
add chicken stock, salt and pepper, cover and cook for 10 minutes
add pasta and about half the parm, stir
serve in bowls and add parm on top
Makes 6 servings

3 cups water
1 1/2 lbs turkey breast cut into 1 1/2 inch chunks
3 cups uncooked brown rice
1 large bag frozen veggies of choice
1 tsp poultry seasoning
1/4 tsp pepper
How To Prepare:
mix soup and water in crockpot
add poultry seasoning and pepper
add rice, turkey, & veggies
stir well
cook on low 8 hours

Cheesy Hashbrown & Chicken
I cannot wait to get home and eat this one tonight!!
Ingredients:
2 pound package frozen hash brown potatoes
2 (10 ounce) cans cheddar cheese soup
1 (13 ounce) can fat free evap milk
1 can French fried onion rings, divided
1 pound boneless skinless chicken breasts cut into 1 inch pieces
salt and pepper to taste
How To Prepare:
Grease / spray the crockpot
add bag of hashbrown, chicken, half the can of fried onions and salt and pepper, stir
in a medium bowl stir together two cans of cheese soup and evap milk, pour over potatoes/chicken
cook on low 8 hours
when ready to serve add the other half of the onions to the top
Makes 8 servings
8 WW points plus per serving

Tonight's dinner...
Ingredients:
2 lbs boneless skinless chicken thighs cut into 2 inch chunks
2 cloves garlic, minced
1/2 tsp ground cumin
1/2 tsp ground coriander
1/4 tsp black pepper
1/4 tsp cinnamon
1 1/4 cup dry lentils, rinsed and drained
1 medium onion, thinly sliced
2 cans chicken broth
1 cup water
1 large yellow squash, quartered lengthwise and cut into 1 inch pieces
1/2 cup raisins
How To Prepare:
1. Combine chicken, garlis, cumin, coriander, pepper and cinnamon in crockpot
2. Add lentils then pour chicken broth and water over the mixture
3. Cook on low 8 hours
4. After 8 hours, turn to high and add squash and raisins and cook for another 15 minutes

BBQ Pork Sandwiches
This is what's for dinner tonight!
Ingredients:
1 medium onion, cut into thin wedges
1 (2lb) boneless lean pork roast
1/2 tsp chili powder
1/2 tsp ground cumin
1/2 tsp black pepper
1/4 tsp garlic powder
1 cup BBQ sauce
1/4 cup cider vinegar
1 tbsp honey
1/4 tsp ground ginger
6 whole wheat hamburger buns
How To Prepare:
1. Combine onions and water in bottom of crockpot
2. trim any excess fat off roast and place in crockpot
3. mix chili powder, 1/4 tsp cumin, pepper and garlic
4. rub all over the pork roast
5. cook on low 8 hours
6. shred pork roast with forks
7. in a large bowl mix bbq sauce, honey, vinegar, ginger and remaining cumin
8. add shredded pork and onions to bowl and combine
9. serve about 1/3 of a cup of meat mixture per person
I am serving it with sweet potato tater tots!
You will have to figure out the WW points on your own based on the type of pork, bbq sauce and buns you use!!!

Lasagna Soup
Trying this for dinner tonight!!
Ingredients:
2 teaspoons olive oil
1 pound Italian sausage, casings removed
1 onion, chopped
1 green bell pepper, chopped
3 cloves garlic, minced
1 (32-ounce) container chicken broth
1 (15-ounce) can tomato sauce
1 (14 1/2-ounce) can petite diced tomatoes
1/2 teaspoon salt
1/4 teaspoon crushed red pepper
4 ounces broken whole-wheat lasagna noodles (about 4 noodles)
1/2 cup chopped fresh basil
3 tablespoons grated parmesan cheese
1/2 cup reduced-fat shredded mozzarella cheese
How To Prepare:
Heat the oil over medium-high heat in a large nonstick saucepot or Dutch oven. Add the sausage, onion, bell pepper, and garlic. Cook over medium-high heat, stirring occasionally, until the sausage is crumbled and browned, 8 – 10 minutes.
Add the broth, tomato sauce, diced tomatoes, salt, and crushed red pepper. Bring to a boil. Reduce the heat and simmer, stirring occasionally, until the flavors are blended, about 20 minutes. Add the noodles; bring to a boil. Reduce the heat and simmer, uncovered, stirring occasionally, until the soup thickens slightly and the noodles are tender, 10 – 12 minutes. Remove from the heat; stir in mozzarella, basil, and the Parmesan.
Makes 8 (1 cup) servings

3 Bean & Turkey Chili
This is in the crockpot right now!
Ingredients:
3 cans of beans (3 different kinds, choose from white, kidney, black, chili, etc...)
1 large can tomato sauce
2 cans diced tomatoes with chilis
1 pound ground turkey
1 packet of chili seasoning (or do your own with chili powder and cumin)
How To Prepare:
cook up the turkey, but not all the way, only until you see a little pink still, it will finish cooking in the crockpot.
put everything in the crockpot and stir (make sure you drain the beans, although if I use chili beans I add the juice of those).
Cook on low all day long
makes 12 (1 cup) servings

3/4 cups light italian dressing
3/4 cups light parmaesan cheese
2 tsp oregeno
How To Prepare:
Put chicken on the bottom of the crockpot
Cover with 1/2 of the cheese, dressing and oregano
Put potatoes on top of the chicken
Add the rest of the cheese, dressing and oregano
Cook on low for 8 hours
Makes 6 servings

FIESTA CHICKEN
This is what's for dinner tonight! Super easy and I think it's going to be tasty!
Ingredients:
6 small boneless skinless chicken breasts (I used 3 large ones)
1 (15oz) can black beans, drained
1 can corn, drained
1 (15oz) jar of any type of salsa you like
1 (8oz) brick 1/3 less fat cream cheese
How To Prepare:
Put the chicken in the crockpot and pour beans, corn and salsa over it. Cook on low about 8 hours.
1/2 hour before you are ready to eat, add the brick of cream cheese to the crockpot.
After 30 minutes, shred the chicken breasts and stir everything together.
Serve over rice.
Makes 6 servings
7 WW points plus points per serving for the chicken only

1 (10.75oz) can condensed French Onion soup
1/2 cup apple juice
3 large Granny Smith apples sliced thick (about 3 cups)
3 cups butternut squash, peeled, seeded and cut into 2 inch pieces
2 medium size parsnips, peeled and cut into 1 inch pieces
1/2 tsp thyme
How To Prepare:
1. Stir everything together in the crockpot and cook on low for 7 to 8 hours
Makes 8 (one cup) servings

Crockpot Chicken & Dumplings
This was also a huge hit in the house!!
Ingredients:
6 skinless boneless chicken breasts (about a pound and a half) cut into 1-inch pieces
2 medium Yukon gold potatoes cut into 1-inch pieces
2 cups baby carrots
2 celery ribs, sliced
2 (10 3/4 oz) cans 98% fat free condensed cream of chicken soup
1 cup water
1 tsp dried thyme
1/4 sp black pepper
2 cups all-purpose baking mix
2/3 cup milk
How To Prepare:
1. Mix the chicken, potatoes, carrots and celery in the crockpot
2. Mix the soup, water, thyme and pepper in a medium bowl
3. Pour soup mixture over the chicken and vegetables
4. Cook on low 7-8 hours
5. 30 minutes before serving, mix all-purpose baking mix and milk in a bowl
6. Turn crockpot to high and drop the batter by spoonfulls over chicken and vegetables
7. Tilt the lid to vent and cook for 30 minutes
Makes 8 servings, 1 1/4 cups each

My charm bracelet
My sister came up with a great idea! As a reward to ourselves for losing weight we are creating a charm bracelet and getting one charm for every 10 pounds we lose! We started with a bracelet and two stoppers, then two charms (since at the time we had lost 20+ pounds). As of today, I have now lost 30 so it is time for a new charm already! The last picture is the new one I am going to get!
Crockpot Mexican Porkchops
This was a huge hit in the Nordhavn/Lockett/Allman house!
Ingredients:
6 boneless porkchops (about 2 pounds)
1 (15oz) can chili beans
1 1/4 cups salsa
1 cup fresh or frozen whole kernel corn
2 cups hot cooked rice
How To Prepare:
1. Place pork chops in the crockpot
2. Add the chili beans (including the liquid) and salsa
3. Cover and cook on low for 5 hours (I did warm for about 8 so it would cook while I was at work)
4. Add corn and cook an additional 30 minutes (prepare rice at this time)
Makes 6 servings / 8 WW points plus per serving
